5-6 grape tomatoes, halved
About 6 basil leaves
One 5-ounce filet of salmon (skinless or not)

1 teaspoon chopped chives
Salt and freshly ground black pepper

Directions:

  1. Preheat your oven to 475 degrees F. Cut a piece of foil that is large enough for you to place the ingredients on, lift up the edges of the foil, and seal the packet, leaving an inch or two of air space above the fish.
  2. Working in the center of the piece of foil, make a bed with the basil leaves, keeping one leaf aside. Sprinkle the leaves with a little salt and pepper. Place the salmon on the leaves and season it with salt and pepper as well.
  3. Put tomatoes on one side of the salmon and grate lemon zest over everything. Scatter spring onion or scallion over the fish and tomatoes. Squirt lemon juice over salmon, then cut two thin slices from the lemon and put them on top of the fish. Top with one or two basil leaves. Sprinkle chopped chives over top and moisten salmon with olive oil.

Seal the foil packet, making sure that it’s airtight and that there is an air space between the fish and the top of its cocoon. Place it on the baking sheet and slide it into the oven.
